So last Friday, Dan and I went on a very impromptu date. He dressed me up in a nice black cocktail dress and I was able to wear my new black BCBG pumps. Yes, very exciting! He surprised me by taking me to a restaurant that I had never been to before, and it was AWESOME!
It is called Antipasto's Vegetarian Bistro and Wine Bar.

Dan ordered The Thomas Jefferson - A stack of marinated Eggplant & Roasted Red Peppers, topped with Mozzarella Cheese & Marinara Sauce surrounded by Onions, Squash, Broccoli, Carrots, Chick Peas, Artichoke Hearts & Olives. It was absolutely amazing! So, when Kelly came into town, we thought that we would try to make it at home.
First, I attempted to make my own roasted red peppers.
