MIA

Yes, I know....I have been totally Missing In Action! I can't believe that I haven't posted anything since July! My bad :(

Well to get things started back up, I will show you one of the meals that I am "prepping" today for this week:

Spinach and Mushroom Manicotti in Creamy Tomato Sauce
What you'll need:
*Coarse salt and pepper
*8 manicotti shells
*1 teaspoon extra-virgin olive oil
*15 oz part-skim ricotta cheese
*1 cup Parmesan
*10 oz frozen spinach, thawed and squeezed dry
*1 package of mushrooms (cook before adding to mixture)
*marinara sauce
*1/4 teaspoon dried oregano
*2 tablespoon heavy cream

What to do:

1. Preheat oven to 375.

2. Cook pasta and arrange in a single layer on an oiled baking sheet.

3. In a medium bowl, combine ricotta and 1/2 cup Parmesan.

4. Stir in spinach and mushrooms and season filing with salt and pepper.

5. Fill manicotti shells with the filling.

6. In a medium bowl, whisk together marinara sauce, oregano, and cream.

7. Pour sauce over shells and top with the remaining Parmesan.

8. Bake 30 minutes, let stand 5 minutes.

YUM!!
